Quick and Easy Quinoa Salad
1 cup Quinoa
Red & Yellow Pepper
Chickpeas
Parsely
Avocado
Can of Tuna (optional)
Boil Quinoa (rinsed) and leave it to simmer. Reduce the heat and fluff it to make sure it is ready. Stir in: half a chopped red and yellow pepper, half a cup rinsed and drained chick peas, half an avocado, 1 tbsp. chopped parsley, 1 tbsp. olive oil, 1 tsp. lemon juice, salt and pepper to taste. Optional: Add for meat lovers – add a can tuna. And presto! Lunch is served!
